A complete list of teas explained.

The world of tea is HUGE. There are many types of tea  and it can be overwhelming and exciting at the same time.

Tea taste can vary from the country it is grown in, growing conditions and to how it is processed. So a green tea grown in Japan won't taste the same as a green tea grown in the USA. 

But take this list and make a tea bucket list to work on for trying a world of teas! The teas with links are from the farm here. 

🍃 True Teas (Camellia sinensis)

White Tea

Lightly processed tea made from young leaves and buds. Delicate, soft, and subtly sweet with low bitterness.

  • Silver Needle (Bai Hao Yin Zhen) – Bud-only tea, very light and smooth.

  • White Peony (Bai Mu Dan) – Buds and leaves with gentle floral notes.

  • Shou Mei – Fuller-bodied white tea with a slightly earthy sweetness.

  • White Puerh – Pressed white tea meant for aging, mild and honeyed.

Why don't we make white tea here?

White tea is a very time intensive pluck as it uses only the youngest and smallest buds of the tea plant. It would take a large amount of plucking to get a reasonable harvest of tea.


Green Tea

Unoxidized tea that retains a fresh, vegetal character. Flavor varies widely by region.

  • Sencha – Grassy, clean Japanese green tea.

  • Matcha – Stone-ground powdered green tea, bold and creamy.

  • Dragon Well (Longjing) – Nutty, smooth Chinese green tea.

  • Gunpowder – Rolled leaves with a smoky, robust flavor.

  • Jasmine Green Tea – Green tea scented with jasmine blossoms.

  • Mississippi Queen Green Tea - Hand-plucked, slightly sweet with little bitterness. 

Yellow Tea

Rare and lightly fermented green tea with softened bitterness and smooth texture.

Oolong Tea

  • Wuyi Rock Oolong – Deep, earthy, and complex.

Black Tea

Fully oxidized tea with bold flavor and rich color.

  • Assam – Malty and strong.

  • Darjeeling – Light, floral, sometimes called the “champagne of tea.”

  • Earl Grey – Black tea flavored with bergamot.
