Breeding tea plants to be seedless.

This week we welcomed Dr Zhang (UGA) and Dr Bi (MSU) and three students to the farm to work on some tea plant breeding. This is where farming and science come together to help create strains of plants with new capabilities.  Do tea plants need to have a seed? In the wild, yes tea plants would need a seed in order to reproduce. At a tea farm we can certainly make use of tea seeds but once you have all the tea plants you need, you really do not need the seeds. Tea plants can also be reproduced by cuttings as well. Guest Blog Post: A visit to The Great Mississippi Tea Company

13 Moons Oolong tea wins gold.

We are excited to share that our 13 Moons Oolong tea made in collaboration with guest tea processor Beverly Wainwright of the Scottish Tea Factory, has won gold at the NATC Competition. The competition held by the Tea & Herbal Association of Canada judges teas based on lead dry, leaf wet, appearance, flavor and overall impact. This tea is very special to us for many great reasons. First, it was made with our friend and what we consider a "tea goddess" Beverly Wainwright. Beverly's experience in the tea industry is outstanding and includes her traveling and working worldwide on bringing tea companies and tea to life. She is an expert in tea processing. She is most certainly at the heart...

This much loved tea is back in stock in very limited volume. This year we only have 37, 1oz bags available. This green tea is hand picked in the field. Then we pan fire it to stop the oxidation process. In the final step, the leaves are placed into the carding machine where it is heated until the leaves roll perfectly into a thin needle shape. The flavor has the components of Umami and Vegetal. The taste has a sweet buttery feel. It is an amazing green tea that has little to no bitterness. This is a Limited Edition tea and it will not last long.
